Tasting note: A lovely golden robe. The first impressions are of freshness (mint, grapefruit), evolving into a richly complex aromatic profile. Full bodied and silky in the mouth, there is a slightly saline character and a touch of praline on the finish. This wine is dry, voluptuous, and capable of cellaring.
Recommended pairings: With a few years of ageing, this will go nicely with a crusted fish on a bed of candied fennel, or with fish dumplings in a shrimp bisque.

Tasting note: A blend of the 2014 and 2015 harvests, this wine was vinified without topping up and without voile (yeast development on the surface). Dark amber in the glass. Intense nose of quince paste, dried apricots, coconut, ground wheat, baked apples and black tea. On the palate, lively acidity gives way to a roundness and medium sweetness, finishing with a touch of bitterness and a hint of curry. Terrific freshness and low sugar (70 g/L).
